Soft, chewy, and beautifully colorful, Rainbow Mochi is a fun dessert made with glutinous rice flour. Lightly sweet and stretchy, these pastel mochi bites are perfect for parties, photos, or a playful..

INGREDIENTS:

  • 100g glutinous rice flour
  • 25g sugar
  • 150ml water
  • Food coloring (pink, yellow, blue, green, etc.)
  • Cornstarch or potato starch (for dusting)

Optinal filling: whipped cream, fruit or chocolate

INSTRUCTIONS:

  1. In a bowl, mix glutinous rice flour, sugar and water until smooth.
  2. Divide the batter evenly into small bowls.
  3. Add a different food coloring to each bowl and mix well.
  4. Cook each colored batter:                                                                                                                  Microwave: Heat each portion for 1 minute, stir, then heat another 30-60 seconds until thick and translucent.                                                                  Steaming: Steam each portion separately for about 10 minutes
  5. Dust a clean surface generously with cornstarch.
  6. Place the cooked mochi colors side by side and gently press them together.
  7. Knead lightly to create a rainbow effect or layer the colors.
  8. Cut and shape into small balls or squares.
  9. Add filling if desired and seal.

TIPS:

  • Use pastel colors for a softer, aesthetic look.
  • Don't over-knead or the colors will blend too much.
  • Best enjoyed fresh.
