Ingredients for Ice Cream Mochi (6-10 pieces)

  • 1 cup glutinus rice flour
  • 2 tbsp sugar
  • 3/4 cup water
  • cornstarch or rice starch (for dusting)
  • ice cream (any flavor)

Preparation  of ice cream mochi

  • First, scoop the ice cream into small balls and place them in the freezer until fully firm.
  • In a bowl, mix the glutinous rice flour, sugar and water. Stir until the mixture is smooth and fres of lumps.
  • Prepare a pot with water and place a bamboo steamer on top. Pour the batter into a heatproof bowl, cover and steam for 15-20 min, stirring occasionally until the dough becomes sticky and elastic.
  • Remove from heat and allow the dough to cool slightly, until warm.
  • Dust a clean surface with rice starch. Place the mochi dough on the surface, stretch it gently and cut into small portios. flaten each piece, place a frozen ice cream ball i the center, seal carefully, and shape into a round form.
  • Return the ice cream mochi to the freezer for about 1 hour before
