INGREDIENTS (20x20 cm pan):

  • 200g glutinous rice flour
  • 150g sugar 
  • 1 tsp baking powder 
  • a pinch of salt
  • 2 eggs
  • 200ml coconut milk
  • 60g melted butter 
  • 1 tsp vanilla extrat
  • 40g shredded coconut (optional)

INSTRUCTIONS:

  1. Preheat oven to 1750
  2. In a bowl mix glutinous rice flour, sugar, baking powder and salt
  3. Add eggs, coconut milk, melted butter and vanilla. Mix until smooth 
  4. Stir in shredded coconut if using
  5. Pour batter into greased or parchment-line pan
  6. Bake for 45-55 minutes, until the top is golden and set
  7. Let cool completely before slicing (texture sets as it cools)
