INGREDIENTS:
- 120g glutinous rice flour
- 40g sugar
- 180ml fresh orange juice
- 1 teaspoon oil
- 1 teaspoon orange zest
- Cornstarch (for dusting)
INSTRUCTIONS:
Prepare the batter:
- In a bowl mix glutinous rice flour and sugar
- Add fresh orange juice, orange zest and oil
- Whisk until smooth and lump-free
Cook the mochi:
- Cover the bowl with plastic wrap
- Microwave for 1 minute, stir well
- Microwave another 1 minutes, stir again
- Microwave 30-60 seconds more until thick, sticky and slightly translucent
(Alternatively, steam for about 15-20 minutes until fully cooked)
Shape:
- Let the dough cool slightly
- Dust your surface with cornstarch
- Knead gently until smooth
- Shape into small balls or flatten and cut into pieces
